Loaf Pans
The loaf pans I use for sandwich breads, quick breads, and everyday baking where pan size matters.
Loaf pans are not always interchangeable. I learned this the hard way. The pan you use affects how the bread bakes, how it rises, and whether the recipe actually works the way it was written. These are the ones I use, with notes on what I’ve found each one does well; so you have some place to start instead of figuring it out through a string of disappointing loaves.

USA Pan 1 lb Loaf Pan
The pan I use when a recipe calls for a 1 lb loaf pan or 8.5″ x 4.5″ x 2.75″.
Best for:
- Recipes written for an 8.5″ x 4.5″ x 2.75″ loaf pan or a true 1 lb loaf
- Yeast breads using about 2.5 to 3.5 cups of store-bought flour
- Yeast breads using about 2.5 to 3 cups of fresh milled flour
- Quick breads with about 6 c batter
USA Pan 1.25 lb Loaf Pan
The pan I use when a recipe calls for a 1.25 lb loaf pan or ” x 5″ x 2.75″.
Best for:
- Recipes written for an 9″ x 5″ x 2.75″ loaf pan or a true 1.25 lb loaf
- Yeast breads using about 3 to 4 cups of store-bought flour
- Yeast breads using about 4 cups of fresh milled flour
- Quick breads with about 8 c batter
USA Pan ABC 1 lb Loaf Pan
I use this pan for small-batch focaccia bread because of the seamless design. It is a good pan for beginners or casual bakers who want easier cleanup and don’t mind rounded corners on their loaves.
Best for:
- Recipes written for an 8.5″ x 4.5″ x 2.75″ loaf pan or a true 1 lb loaf
- Yeast breads using about 2.5 to 3.5 cups of store-bought flour

USA Pan 13 x 4 Pullman Pan
The pan I use when I want a full-size sandwich loaf with straighter sides and more even slices.
Best for:
- Recipes written for a 13″ x 4″ x 4″ Pullman pan
- Larger sandwich loaves
- Square slices for toast and sandwiches
- Yeast breads where structure and even shape matter
- Bakers who want a full-size Pullman loaf instead of a smaller loaf
